Foods fit for fiery summer forecasts

As the scorching SoCal summer weather starts rolling in, it is time to consider what kinds of meals will keep you and your mobile home feeling cool. Here are some ideas of foods and meals that will leave you feeling refreshed and help you take advantage of the in-season fruits and vegetables while they are at their best.

Appetizers & Snacks: If you like tomatoes, summer is definitely the season for this vegetable. Enjoy them cut up with salt and pepper, in a Caprese salad with basil and mozzarella pearls, or on top of toast with chopped basil, olive oil, and balsamic vinegar. Eggs also make a good summer snack. Enjoy them simply hard-boiled or deviled for an extra kick of flavor.

Lunch: Tuna salad is an excellent source of protein, and is guaranteed to make you feel light and refreshed. Just add mayonnaise, chopped celery, shredded carrots, and seasonings to make a tasty sandwich. Other cold-cut sandwiches are also good lunch options for the hottest season of the year. Try adding fun sauces to your subs, such as garlic aioli or your favorite salad dressing.

Dinner: Salads are perfect options for chilled dinners, and there are so many kinds you can build: Caesar, Southwest, Asian, Mediterranean, etc. You can also opt for pasta salad if you want to make your dinner more substantial. Chicken tacos make excellent cold dinners, especially topped with mango slaw and avocado. Don’t forget the cilantro lime dressing!
